Tisha’s Macaroni & Cheese Cupcakes

Makes 8-­12 servings

•  2 stacks of butter (16 T)

•  2 cups (16 oz.) of VELVEETA, cut into small cubes

•  2 cups shredded extra sharp cheddar cheese

•  ½ cup (8 oz.) shredded Muenster

•  ½ cup shredded jack cheese

•  4 cups evaporated milk

•  4 eggs beaten lightly

•  ½ tsp LAWRY’s seasoning salt or more to taste

•  ¼ tsp black pepper

•  ¼ tsp dry mustard

•  ½ tsp sugar

•  ¼ tsp paprika

•  2 T of butter

•  Garnish of cheese and paprika

Preheat oven 350 degrees. Lightly butter a casserole dish.

Bring salted water to a boil; add oil, then add macaroni until tender.

Follow directions for macaroni cooking time. Stir occasionally. Don’t overcook.

Meanwhile, cut the VELVEETA into small cubes. Then, mix all the other shredded cheeses (except the VELVEETA) into a small bowl.

Microwave in a separate bowl 2 sticks of butter and all the dry ingredients. Once the macaroni is done, drain and return to pot. Stir the butter mixture with macaroni. Add milk, shredded cheeses, cubed VELVEETA and eggs. Mix all together.

Pour the mix into a buttered casserole dish.

Sprinkle the remaining cheese and a little paprika.

Finally, dab the entire pan with small pieces of the 2 tablespoons of butter on top of the cheese.

Bake for 45 minutes to an hour.

Huda’s Pizza Party Bar

Makes 8 servings

MAIN INGREDIENTS

•  2 packages of ready made pizza dough – store bought

•  2 cups pizza sauce

•  1 cup each of desired toppings (see toppings bar)

•  2 cups shredded part-­skim mozzarella cheese

TOPPINGS BAR

•  Mozzarella Asiago

•  Ground beef

•  Spinach

•  Provolone

•  Red onions

•  Feta

•  Pesto

• Turkey sausage

• Turkey or beef pepperoni

•  Black olives

•  Mushrooms

•  Banana peppers

•  Any other topping your heart desires!

Let’s start with the pizza dough. Pre-­heat the oven to the recommended temperature. Remove the dough from the container and place it on a floured surface. Roll dough into a large square that is about ½ inch thick. Cut a large square in half with a pizza cutter and then cut the halves into quarters.

Once the dough is cut into desired size, place it on greased baking sheets. Pre-­bake for about 10 minutes to start the cooking process. Then remove from oven. Start topping your pizza by evenly spreading the top surface with pizza sauce using a spoon. Make sure to leave about a ½ inch of the edge of the crust un-­sauced.

Now, the fun part. Top your pizza with your desired toppings. Then, place your work of art back in the oven to finish cooking for 10‐15 minutes until the crust is golden and the cheese is bubbly. Once done, let pizza rest for 3-­5 minutes depending on its size.

•  20 wings

•  4 T butter or olive/coconut oil (Holly uses Earth’s Best or skinny coco oil)

•  Breading: brown rice or whole grain bread crumbs

•  Finely ground flax seed

Preheat oven to 375 degrees.

Melt the butter and season it to taste. (Holly uses a Cajun spice mix.)

Dip the wings in the melted butter mixture and then roll them in the crunchy breading.

Bake for 40 minutes or until crispy and cooked through.
